Lemon Loaf: A Refreshing Citrus Delight!

Hello, baking enthusiasts! Today, I'm thrilled to share with you my latest recipe for a mouthwatering Zesty Lemon Loaf. This delightful treat combines the tangy goodness of lemons with a moist and fluffy texture that will leave your taste buds dancing with joy. Ingredients:

For the loaf:

- 1 ½ cups all-purpose flour

- 1 teaspoon baking powder

- ¼ teaspoon baking soda

- ½ teaspoon salt

- 1 cup granulated sugar

- 2 large eggs

- ½ cup unsalted butter, softened

- ½ cup buttermilk

- 2 tablespoons lemon zest

- ¼ cup freshly squeezed lemon juice

- 1 teaspoon vanilla extract


For the glaze:

- ½ cup powdered sugar

- 2 tablespoons freshly squeezed lemon juice

- 1 teaspoon lemon zest


Instructions:


1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan. Set it aside for later use.


2. In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set this dry mixture aside.


3. In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. You can use an electric mixer or do this by hand.


4. Add the eggs one at a time, mixing well after each addition. Make sure to scrape down the sides of the bowl to incorporate all the ingredients.


5. Now, it's time to add the buttermilk, lemon zest, lemon juice, and vanilla extract to the butter and sugar mixture. Mix until well combined.
